Zucchini Crust Grilled Cheese 

Ingredients

  • Makes 2 grilled cheese sandwiches
  • Zucchini crust “bread” slices
  • 4 cups shredded zucchini
  • 1 egg
  • ½ cup shredded mozzarella cheese
  • Four tablespoons grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • Pinch of ground black pepper
  • Grilled cheese
  • 1 tablespoon butter, room temperature
  • ⅓ cup / 3 oz. / eighty five gr sharp cheddar cheese, grated/shredded, at room temperature

Directions

  1. Zucchini crust “bread” slices
  2. Preheat oven to 450°F (220°C) and location a rack within the middle.
  3. Line a baking sheet with parchment paper and liberally grease it (instead use a silicone baking mat). Set apart.
  4. Place shredded zucchini in a microwave-safe dish and microwave on high for six minutes. Transfer to a dishcloth (or tea towel) and twist it to squeeze as plenty moisture as you can. This is very important. The zucchini need to be dry, otherwise you’ll emerge as with gentle dough, impossible to use as slices of bread
  5. In a bowl mix zucchini, egg, mozzarella cheese, Parmesan cheese, oregano, salt, and pepper.
  6. Unfold zucchini mixture onto the covered baking sheet and form into 4 squares.
  7. Bake for approximately 15 to twenty minutes until gently golden brown
  8. Eliminate from the oven and permit cool 10 minutes before peeling them off the parchment paper (be careful not to interrupt them!)
  9. Assemble grilled cheese
