  2. In a large bowl combine hen, bell peppers, onion, oil, salt, pepper, chili powder, garlic powder, cumin, and paprika. Toss nicely to combine.
  3. Unfold bird and veggies out on the baking sheet.
  4. Bake for 20 mins, then activate the broiler and cook for an extra three to 4 mins, or until the peppers begin to char.
  5. Cast off from the oven, sprinkle with lime juice and with chopped cilantro (or parsley).
